That is an interesting postmark with what appears to be an iron cross. Would that be a fancy cancel made from a cork?

Looks more like a rubber stamp than a hand-carved cork cancel to me. By the late 1880s rubber stamps were in use.

The Germans, especially the Nazi's, loved horses and made them the subject of numerous stamps. Here are stamps from 1942-4 honoring the 9th (B205), 10th (B243), and 11th (B283) "Brown Ribbon": winner at Munich:
